Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried)

3/4 cup buttermilk

1 large egg (for egg wash, optional)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until they are fully combined and aerated.

Cut in Butter: Add the cold, cubed butter to the dry mixture. Using a pastry cutter or your fingertips, incorporate the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.

Add Cheese and Herbs: Stir in the shredded sharp cheddar cheese along with the finely chopped rosemary and thyme, ensuring that the herbs and cheese are evenly distributed throughout the mixture.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk and the egg (if using for an egg wash). Pour this wet mixture into the bowl containing your dry ingredients.

Form Dough: Gently stir the mixture with a spoon or spatula until just combined. Be careful not to overmix; the dough should appear slightly shaggy but cohesive.

Shape Biscuits: Transfer the dough onto a lightly floured surface. With gentle hands, knead the dough a couple of times until it holds together. Pat the dough into a rectangle about 1-inch thick. Using a biscuit cutter or a floured glass, cut into rounds. Gather any scraps, re-knead, and cut out additional biscuits until all dough is utilized.

Bake: Place the formed biscuits onto the prepared baking sheet, making sure they are about 2 inches apart. If you wish for a golden top, brush the biscuit tops lightly with the egg wash. Bake for 12-15 minutes, or until they are beautifully golden brown.

Serve: Once baked, remove the biscuits from the oven and allow them to cool slightly on a wire rack. Serve warm, accompanied by butter, or as a flavorful side dish to complement your meal!
