Ingredients

4 large russet potatoes, peeled and diced into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth

2 cups sharp cheddar cheese, grated (plus extra for garnish)

1 cup heavy cream

1/2 cup whole milk

1/4 cup unsalted butter

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

Chopped green onions, for garnish

Crumbled crispy bacon (optional), for garnish

Instructions

Sauté the Aromatics: In a large pot over medium heat, combine the olive oil and butter. Once the butter is melted, add the chopped onion and sauté for about 5 minutes, until the onion turns translucent. Stir in the minced garlic and continue to sauté for an additional minute, until fragrant.

Cook the Potatoes: Next, add the diced potatoes to the pot, stirring to coat them with the aromatics. Pour in the broth and bring the mixture to a gentle boil. Season generously with salt, pepper, dried thyme, and smoked paprika. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.

Blend the Soup: Once the potatoes are tender, carefully blend the soup using an immersion blender until smooth and creamy. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender, being careful with the hot liquid, and blend until fully smooth.

Incorporate the Dairy: Return the blended soup to the pot over low heat. Stir in the heavy cream and whole milk, mixing well. Gradually sprinkle in the grated cheddar cheese, stirring continuously until the cheese is completely melted and blended into the soup.

Adjust the Seasoning: Taste the soup and adjust seasoning as needed with additional salt and pepper. If the soup is thicker than desired, feel free to add a little more milk or broth to reach your preferred consistency.

Serve and Garnish: Ladle the hot soup into serving bowls. Top with a sprinkle of extra cheddar cheese, a scattering of chopped green onions, and crumbled bacon if desired for added flavor and crunch.
