1 cup carrots, peeled and diced

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups chicken broth (low sodium preferred)

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

½ cup fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it reaches the desired temperature while you prepare the casserole.

    Sauté the Chicken: Heat a splash of oil in a large skillet over medium heat. Add the diced chicken and sauté for approximately 5-7 minutes, or until the pieces are cooked through and no longer pink on the inside. Once done, remove the chicken from the skillet and set it aside.

      Cook the Vegetables: In the same skillet, add the chopped onions and minced garlic. Sauté for about 3-4 minutes until they become fragrant and the onions are translucent. Then, add in the broccoli florets and diced carrots, cooking for an additional 3-4 minutes until they are just tender.

        Combine Ingredients: In a large mixing bowl, combine the cooked jasmine rice, sautéed chicken, and the vegetable mixture from the skillet. Pour in the chicken broth and heavy cream, ensuring all ingredients are well integrated.

          Season the Mixture: Sprinkle in the dried thyme, paprika, salt, and black pepper. Using a large spoon or spatula, mix everything evenly until all ingredients are fully combined.
