Ingredients

4 large eggs

1/4 cup milk (or your favorite non-dairy alternative)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup shredded cheddar cheese (or your preferred cheese variety)

1/2 cup diced bell peppers (mixing colors adds vibrancy – red, green, and yellow work well)

1/4 cup chopped green onions

4 large whole wheat tortillas (or wraps of your choice)

2 tablespoons olive oil (1 tablespoon for cooking veggies, 1 tablespoon for the eggs)

Salsa or hot sauce (for serving, optional)

Instructions

Prepare the Egg Mixture: In a medium mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and onion powder. Beat the mixture well until it is fully combined and slightly frothy.

Cook the Vegetables: In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell peppers and sauté for about 3-4 minutes, stirring occasionally, until they become tender. Remove the bell peppers from the skillet and set them aside on a plate.

Scramble the Eggs: Using the same skillet, add the remaining tablespoon of olive oil. Pour the prepared egg mixture into the skillet. Cook the eggs, stirring gently with a spatula, for about 2-3 minutes until they begin to set but remain creamy. In the final minute, sprinkle the shredded cheddar cheese over the eggs, allowing it to melt into the mixture.

Combine the Ingredients: Once the eggs are cooked to your liking, remove the skillet from the heat. Gently fold in the sautéed bell peppers and chopped green onions, ensuring everything is evenly distributed.

Assemble the Wraps: Lay each tortilla flat on a clean surface. Spoon a generous portion of the egg and cheese mixture into the center of each tortilla. Fold in the sides of the tortilla, then roll them tightly from the bottom up to form a wrap.

Final Touch (Optional): For a crispy texture, return the wraps seam-side down to the skillet and toast them for 1-2 minutes on each side over medium heat until they are golden brown and slightly crispy.

Serve: Slice the wraps in half for easier handling and serve them warm. Optionally, offer salsa or your choice of hot sauce on the side for an added kick of flavor.
