For the Lentil Filling:

1 cup green or brown lentils, rinsed and drained

2 cups vegetable broth

1 tablespoon olive oil

1 medium onion, finely diced

2 cloves garlic, minced

2 medium carrots, peeled and diced

1 cup celery, diced (about 2 stalks)

1 cup mushrooms, finely chopped

1 cup frozen peas, thawed

1 tablespoon tomato paste

1 tablespoon soy sauce or tamari (for gluten-free option)

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

For the Mashed Potato Topping:

4 medium-sized potatoes, peeled and cut into chunks

1/4 cup milk or plant-based milk (such as almond or oat milk)

2 tablespoons butter or olive oil

Salt and pepper, to taste

Optional Garnish:

Fresh parsley, finely chopped

Cook the Lentils: In a medium saucepan, combine the rinsed lentils and vegetable broth. Bring the mixture to a rapid boil over high heat. Once boiling, reduce the heat to low and allow to simmer uncovered for about 25-30 minutes, or until the lentils are tender but not mushy. Drain any excess liquid and set aside.

    Prepare the Vegetable Filling: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent and fragrant.

      Add Vegetables: Stir in the diced carrots and celery, cooking for an additional 5-6 minutes until they begin to soften. Next, add the chopped mushrooms and continue to cook for another 4-5 minutes, or until they release their moisture and start to brown.

        Combine the Filling Ingredients: Add the cooked lentils to the skillet along with the thawed peas, tomato paste, soy sauce, dried thyme, and rosemary. Stir well to combine all the ingredients. Season with salt and pepper to your taste. Cook for an additional 5 minutes until everything is heated through. Remove the skillet from heat.

          Make the Mashed Potatoes: While the filling is cooking, fill a large pot with water and add a generous pinch of salt. Bring it to a boil and add the diced potatoes. Cook for about 15-20 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot. Mix in the milk, butter or olive oil, and mash until smooth and creamy. Season with salt and pepper to taste.

            Assemble the Shepherd's Pie: Preheat your oven to 400°F (200°C). In a greased baking dish, evenly spread the lentil and vegetable filling at the bottom. Using a spatula, carefully spread the creamy mashed potatoes over the filling, smoothing the top for an even finish.

              Bake: Place the assembled Shepherd's Pie in the preheated oven and bake for 25-30 minutes, or until the potato topping is slightly golden and the filling is bubbling around the edges.

                Garnish and Serve: Once cooked, remove the pie from the oven and allow it to cool for a few minutes. Just before serving, sprinkle chopped fresh parsley on top for a pop of color and flavor.
