Savory Mushroom and Swiss Sliders

1 pound ground beef (or ground chicken/turkey for a lighter alternative)

1 cup finely chopped mushrooms (cremini or button work well)

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

Salt and pepper, to taste

8 slices Swiss cheese

12 slider buns (mini brioche or white)

2 tablespoons olive oil

Fresh arugula or spinach, for topping

Dijon mustard, for serving

Prepare the Mushroom Mixture: Heat 1 tablespoon of olive oil in a skillet over medium heat. Once the oil is shimmering, add the finely chopped onions and sauté until they become translucent, about 3-4 minutes. Stir in the minced garlic and chopped mushrooms, cooking until the mushrooms have released their moisture and become golden brown, which should take about 5-7 minutes. Remove the skillet from heat and let the mushroom mixture cool for a few minutes.

    Make the Patties: In a large mixing bowl, combine the ground beef (or your chosen alternative) with the cooled mushroom mixture. Add the Worcestershire sauce, soy sauce, and season generously with salt and pepper. Gently mix the ingredients together until just combined, being careful not to overwork the meat. Form the mixture into 12 small patties, ensuring they are even in size for uniform cooking.

      Cook the Patties: Using the same skillet, heat the remaining tablespoon of olive oil over medium-high heat.
