1 cup pumpkin puree (either canned or homemade)

1 cup kale, chopped with stems removed

6 large eggs

1/2 cup milk (dairy or plant-based)

1/2 cup feta cheese, crumbled

1 small onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1/2 teaspoon paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to prepare for baking the frittata.

    Sauté the Aromatics: In a large, oven-safe skillet, heat the olive oil over medium heat. Once hot, add the diced onion and minced garlic. Sauté for approximately 3-4 minutes, or until the onion is translucent and the garlic is aromatic.

      Add the Kale: Incorporate the chopped kale into the skillet. Stir and cook for another 2-3 minutes until the kale has wilted. Season the mixture with salt, pepper, thyme, and paprika, ensuring everything is well combined.

        Prepare the Pumpkin-Egg Mixture: In a separate mixing bowl, whisk together the pumpkin puree, eggs, and milk until fully blended. Add a pinch of salt and pepper to enhance the flavor.

          Combine the Mixtures: Pour the pumpkin-egg mixture over the sautéed vegetables in the skillet. Use a spatula to gently stir and combine, ensuring the ingredients are evenly distributed. Sprinkle crumbled feta cheese on top.
