4 medium sweet potatoes

1 lb ground turkey

2 cups fresh broccoli florets, finely chopped

1 small onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 cup shredded cheddar cheese (optional)

2 tablespoons olive oil

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 400°F (200°C).

      - Using a fork, prick each sweet potato several times to allow steam to escape during cooking. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until they are tender. To check doneness, insert a knife into the thickest part; it should slide in without resistance.

        Cook the Turkey Filling:

          - While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 5 minutes, or until it becomes translucent and fragrant.

            - Add the minced garlic and ground turkey to the skillet. Use a wooden spoon to break apart the turkey as it cooks. Season with smoked paprika, dried thyme, salt, and pepper. Stir well and cook until the turkey is evenly browned and cooked through, approximately 7-10 minutes.

              Incorporate the Broccoli:

                - Once the turkey is browned, stir in the chopped broccoli. Cook for an additional 5-7 minutes, allowing the broccoli to soften while maintaining its vibrant green color. If using cheddar cheese, add half a cup at this stage and stir until it melts into the mixture.

                  Assemble the Stuffed Sweet Potatoes:
