Savory Turkey and Sweet Potato Hash

1 pound ground turkey

2 medium sweet potatoes, peeled and diced into small cubes

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon chili powder

Salt and black pepper, to taste

2 tablespoons olive oil

¼ cup fresh parsley, chopped (for garnish)

4 large eggs (optional, for serving)

Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is hot, add the diced sweet potatoes and season with salt and black pepper. Cook for approximately 10-12 minutes, stirring occasionally. The sweet potatoes should be tender and develop a lovely golden brown color. Once done, remove them from the skillet and set aside.

    Sauté Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the finely chopped onion and the diced red and green bell peppers. Sauté the mixture for about 5-7 minutes or until the vegetables soften and become fragrant.

      Brown the Turkey: Add the ground turkey to the skillet with the sautéed vegetables. Using a spatula, break apart the meat as it cooks. Cook for approximately 6-8 minutes or until the turkey is fully cooked through and no longer pink.
