Ingredients

For the Shrimp:

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh lime juice

For the Pineapple Slaw:

2 cups green cabbage, finely shredded

1 cup fresh pineapple, diced

1/2 red bell pepper, thinly sliced

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey

Salt and pepper, to taste

For Assembly:

8 small corn or flour tortillas

Lime wedges, for serving

Additional cilantro, for garnish

Instructions

Marinate the Shrimp: In a large mixing bowl, whisk together the olive oil, chili powder, ground cumin, garlic powder, smoked paprika, salt, pepper, and lime juice to create a flavorful marinade. Add the shrimp to the bowl, tossing to ensure they are evenly coated in the marinade. Allow the shrimp to marinate for 15-20 minutes, enhancing their flavor.

Prepare the Pineapple Slaw: In a separate bowl, combine the finely shredded cabbage, diced pineapple, thinly sliced red bell pepper, chopped red onion, and chopped cilantro. In a small bowl, whisk together the apple cider vinegar, honey, salt, and pepper until well combined. Pour the dressing over the vegetable mixture and toss gently to combine all ingredients thoroughly. Set the slaw aside to allow the flavors to meld.

Cook the Shrimp: Heat a skillet over medium-high heat. Once the skillet is hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, until the shrimp are pink and opaque. Remove from heat and set aside.

Warm the Tortillas: In a dry skillet or over a gas flame, warm the tortillas for about 30 seconds on each side, or until they become soft and pliable. Keep them warm in a clean kitchen towel until ready to assemble.

Assemble the Tacos: To create each taco, place a few cooked shrimp in the center of a warm tortilla. Top generously with the pineapple slaw. If desired, sprinkle extra chopped cilantro on top and finish with a squeeze of fresh lime juice for a burst of flavor.

Serve: Arrange the assembled tacos on a serving platter and accompany them with lime wedges on the side, allowing guests to add extra zest. Enjoy your delicious tropical shrimp fiesta!
