Shrimp Tacos with Watermelon Slaw

Juice of 1 fresh lime

For the Watermelon Slaw:

2 cups fresh watermelon, diced into small cubes

1 cup red cabbage, finely shredded

½ cup carrots, grated

¼ cup fresh cilantro, chopped

1 tablespoon honey

2 tablespoons apple cider vinegar

Salt and freshly ground black pepper, to taste

For the Tacos:

8 small corn tortillas

Lime wedges, for serving

Avocado slices (optional, for garnish)

Prepare the Shrimp: In a medium bowl, mix together the olive oil, chili powder, ground cumin, smoked paprika, salt, pepper, and fresh lime juice. Add the peeled and deveined shrimp to the bowl, ensuring each piece is thoroughly coated in the marinade. Allow the shrimp to marinate for 15-20 minutes while you prepare the watermelon slaw.

    Make the Watermelon Slaw: In a large mixing bowl, combine the diced watermelon, finely shredded red cabbage, grated carrots, and chopped cilantro. In a separate small bowl, whisk together the honey, apple cider vinegar, salt, and pepper until smooth.
