2 lbs boneless, skinless chicken breasts

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese (plus extra for serving)

2 cups frozen cheese tortellini

1 cup fresh spinach, chopped

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, finely chopped (for garnish)

Prep the Chicken: Season the boneless, skinless chicken breasts with salt, pepper, and Italian seasoning on both sides. In a large skillet over medium heat, warm the olive oil. Once hot, add the chicken breasts and sear for about 3-4 minutes per side, until they are golden brown. Once done, remove the chicken from the skillet and set it aside.

    Assemble Ingredients in Slow Cooker: In a 6-quart slow cooker, place the seared chicken breasts. Pour in the chicken broth and heavy cream. Then, add the minced garlic, chopped spinach, and half of the freshly grated Parmesan cheese to the mix.
