Ingredients

1 lb ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (28 oz) crushed tomatoes

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, diced

2 cloves garlic, minced

2 cups beef broth

2 tablespoons chili powder

1 tablespoon smoked paprika

1 teaspoon cumin

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup sliced pepperoni

1 cup diced smoked sausage (e.g., andouille or kielbasa)

1 cup shredded cheddar cheese (for topping)

1 cup sliced olives (for topping)

½ cup thinly sliced green onions (for garnish)

Sour cream (for serving)

Fresh cilantro (for garnish, optional)

Instructions

Brown the Meat: In a skillet over medium heat, add the ground beef or turkey. Cook, breaking it apart with a spatula, until it is fully browned and no longer pink, about 5-7 minutes. Drain any excess fat, then transfer the cooked meat into the slow cooker.

Add Vegetables: To the slow cooker, add the diced red and green bell peppers, the diced onion, and the minced garlic. Stir well to ensure the vegetables are evenly mixed with the meat.

Combine Liquids: Pour in the can of crushed tomatoes along with the beef broth. Add the drained and rinsed kidney beans and black beans, mixing everything together to combine.

Season the Chili: Sprinkle in the chili powder, smoked paprika, cumin, oregano, and season with salt and black pepper to taste. Stir the mixture well to coat all ingredients with the spices.

Incorporate Charcuterie Elements: Gently fold in the sliced pepperoni and diced smoked sausage, ensuring they are evenly distributed throughout the chili mixture for an irresistible flavor infusion.

Cook: Secure the lid on the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours. This slow cooking will allow the flavors to meld beautifully, creating a rich and hearty chili.

Serve: Once the cooking time is complete, ladle the chili into serving bowls. Top each bowl with a generous amount of shredded cheddar cheese, sliced olives, and a sprinkle of green onions. Add a dollop of sour cream on top and garnish with fresh cilantro, if desired.
