Ingredients

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (preferably smoky or chipotle-flavored)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon cayenne pepper (optional, for extra heat)

1 tablespoon olive oil

Salt and black pepper, to taste

4-6 hamburger buns

Coleslaw (for topping, optional)

Sliced pickles (for topping, optional)

Instructions

Season the Chicken: Begin by seasoning the chicken thighs generously with salt, pepper, smoked paprika, ground cumin, and cayenne pepper (if using). Take care to rub the spices evenly over the entire surface of the chicken for maximum flavor.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 5 minutes, stirring occasionally, until the onions become tender and translucent. Add in the minced garlic and continue to cook for another 1-2 minutes, or until the garlic is fragrant but not burnt.

Combine in the Cooker: In a slow cooker or Instant Pot, begin by adding the sautéed onion and garlic mixture to the bottom. Place the seasoned chicken thighs on top of the onions. Pour the BBQ sauce over the chicken, ensuring each piece is thoroughly coated for rich flavor.

        Cooking Time:

          - Slow Cooker: Cover and cook on the low setting for 6-7 hours or on high for 3-4 hours, until the chicken is tender and able to be easily shredded with a fork.

            - Instant Pot: Secure the lid and cook on high pressure for 15 minutes. After cooking, allow for a natural pressure release for about 10 minutes, then manually release any remaining pressure carefully.

Shred the Chicken: Once cooked, carefully remove the chicken from the pot. Use two forks or a hand mixer on low speed to shred the chicken into bite-sized pieces. Return the shredded chicken to the pot, mixing it well with the residual sauce for enhanced flavor.

Toast the Buns: While the chicken is finishing up, toast the hamburger buns. You can do this on a preheated grill or in a toaster until they achieve a lovely golden brown color.

Assemble Your Sandwiches: On each toasted bun, generously spoon on the smoky pulled BBQ chicken. Top with coleslaw and sliced pickles if you desire a crunchy texture and extra flavor contrast.

Serve and Enjoy: Nestle your completed sandwiches on a platter and dig in. Pair with your favorite side dishes like crispy potato chips or hearty baked beans for a satisfying meal.
