1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons milk

1/2 cup shredded cheddar cheese

4 English muffins, split and toasted

4 slices of cooked bacon or sausage patties (optional for added heartiness)

Fresh cilantro or parsley for garnish

Hot sauce (optional for extra heat)

Preheat the Oven: Begin by setting your oven to 350°F (175°C) so it’s ready when you need to bake the egg muffins.

    Prepare the Egg Mixture: In a medium mixing bowl, crack the four eggs and add the milk. Whisk thoroughly until the mixture is smooth. Then, incorporate the garlic powder, paprika, chili powder, cayenne pepper, salt, and black pepper, ensuring everything is evenly blended.

      Sauté the Vegetables: Heat a splash of oil in a frying pan over medium heat. Add the diced bell peppers and onions, sautéing for about 3-4 minutes until they soften and release their fragrant aromas. Once done, remove from heat and allow them to cool for a minute.

        Combine Ingredients: Gently fold the sautéed bell peppers, onions, and shredded cheddar cheese into the egg mixture. Make sure the vegetables and cheese are evenly distributed throughout the eggs.

          Bake the Egg Mixture: Lightly grease a muffin tin and pour the egg-vegetable mixture into each cup, filling them about two-thirds full. Bake in your preheated oven for 18-20 minutes, or until the muffins puff up and turn a light golden color on top.

            Toast the English Muffins: While the egg muffins are baking, toast the English muffins until they achieve a golden brown color. If you opted for bacon or sausage patties, warm them up in a separate pan or microwave during this time.

              Assemble the Sandwiches: Once the egg muffins are baked, allow them to cool for a few minutes before carefully removing them from the tin. On the bottom half of each toasted English muffin, place an egg muffin, followed by a slice of bacon or sausage (if using). Cap each sandwich with the top half of the muffin.
