Spicy Grilled Corn on the Cob

4 ears of fresh corn, husked

1/2 cup mayonnaise

1/4 cup sour cream

1 tablespoon chili powder

1 teaspoon cayenne pepper (adjust according to desired spice level)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

Juice of 1 lime

1/2 cup crumbled feta cheese (optional)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your grill to a medium-high heat setting, aiming for around 400°F (200°C).

    Husk the corn by peeling back the green leaves and removing all the silk strands. Rinse the ears of corn under cold water to clean them, then pat them dry using a kitchen towel.

      In a medium mixing bowl, whisk together the mayonnaise and sour cream until smooth. Add in the chili powder, cayenne pepper, garlic powder, smoked paprika, salt, and fresh lime juice. Stir until fully combined and the mixture is creamy and flavorful.

        Once the grill has preheated, place the prepared corn directly onto the hot grill grates. Grill the corn for approximately 10-15 minutes, turning the ears occasionally to ensure all sides are cooked evenly. The corn should become tender and develop a slight char.

          After grilling, carefully remove the corn from the grill using tongs. While the corn is still hot, generously coat each ear with the chili-lime mayo mixture, ensuring each kernel is covered in flavor.

            For an additional burst of taste, sprinkle crumbled feta cheese over the coated corn if desired.

              Finish by garnishing the corn with freshly chopped cilantro and adding an extra squeeze of lime juice to enhance the zing.
