2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 can (15 oz) black beans, drained and rinsed under cold water

1 red bell pepper, diced

1 small onion, finely diced

3 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (adjust to your heat preference)

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil

1 cup vegetable broth (or more as needed)

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Sprinkle in the ground cumin, smoked paprika, chili powder, salt, and black pepper. Stir to combine and cook for another 5 minutes, allowing the spices to infuse the sweet potatoes.
