Spicy Watermelon Popsicles

4 cups seedless watermelon, cubed

1 tablespoon fresh lime juice (from about 1 lime)

1-2 teaspoons honey or agave syrup (adjust based on sweetness preference)

1 teaspoon Tajín seasoning (or substitute with chili powder for an alternative spice)

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Watermelon: Begin by placing the cubed seedless watermelon into a blender or food processor. Blend on high speed until the mixture is completely smooth, ensuring that there are no chunky bits remaining. This will create a luscious watermelon puree.

    Mix in Flavors: Transfer the watermelon puree into a mixing bowl. Add the freshly squeezed lime juice, honey or agave syrup, Tajín seasoning, and a pinch of salt into the bowl. Stir the mixture thoroughly until all ingredients are well combined. Don't forget to taste it! Adjust the sweetness by adding more honey or agave syrup and the spiciness by increasing the Tajín to match your personal preference.

      Pour and Fill Molds: Carefully take your spicy watermelon mixture and pour it into popsicle molds. Be sure to leave a little space at the top of each mold to allow for possible expansion as they freeze.

        Insert Sticks: If your popsicle molds include sticks, insert them according to the manufacturer's instructions. If they don’t, cover the molds tightly with a piece of foil. Puncture a small slit in the center of each mold to hold the sticks in place.

          Freeze: Place the filled molds upright in the freezer. Let them freeze for at least 4-6 hours, or until the popsicles are completely solid and firm to the touch.

            Unmold and Serve: To easily release the popsicles, hold the molds under warm running water for a few seconds. This will help to loosen them. Gently pull the popsicles out of the molds and serve immediately. If desired, garnish with fresh mint leaves for an extra touch of flavor and color.
