For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/4 cup soy sauce

2 tablespoons honey

3 tablespoons rice vinegar

4 cloves garlic, minced

1 teaspoon ginger, freshly grated

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste for spiciness)

For the Noodles:

8 oz (225g) rice noodles or soba noodles

2 tablespoons vegetable oil, divided

1 bell pepper, thinly sliced (any color you prefer)

1 cup broccoli florets

1 carrot, julienned

1 green onion, sliced (for garnish)

Toasted sesame seeds (for garnish)

For the Sauce:

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon oyster sauce

1 tablespoon water

Juice of 1 fresh lime

Marinate the Chicken: In a medium mixing bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. Add the bite-sized chicken pieces, ensuring each piece is fully coated in the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 12 hours for a more intense flavor.

    Cook the Noodles: Prepare the rice noodles according to the package instructions. Once they are tender, drain and rinse them under cold water to halt the cooking process and prevent sticking. Set them aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken along with all of the marinade. Stir-fry for approximately 7-10 minutes, or until the chicken is thoroughly cooked and has a nice caramelized color. Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, pour in the remaining tablespoon of vegetable oil. When the oil is shimmering, toss in the sliced bell pepper, broccoli florets, and julienned carrot. Stir-fry for about 5 minutes, or until the vegetables are vibrant and tender-crisp.

          Combine Everything: Reduce the heat to medium. Add the cooked noodles and the chicken back into the skillet with the sautéed vegetables. In a small bowl, whisk together soy sauce, hoisin sauce, oyster sauce, water, and lime juice. Pour this sauce over the noodle and chicken mixture, tossing everything together until all ingredients are well combined. Allow it to cook for an additional 2-3 minutes so the noodles can soak up the sauce.
