250g chorizo sausage, casings removed and crumbled

1 small onion, finely chopped

1 tsp smoked paprika

½ tsp ground cumin

¼ tsp cayenne pepper (adjust according to spice preference)

Salt and freshly ground black pepper, to taste

6 small corn or flour tortillas

1 ripe avocado, sliced

Fresh cilantro, chopped (for garnish)

Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). On a baking sheet, toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper until evenly coated. Spread them out in a single layer. Roast in the oven for 25-30 minutes, flipping the potatoes halfway through, until they are golden brown and tender.

    Cook the Chorizo: While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the crumbled chorizo, and cook for 5-7 minutes, stirring occasionally, until it’s nicely browned and begins to crisp up. If there is excess fat in the skillet, drain it—unless you prefer the extra richness.

      Sauté Onions and Garlic: To the skillet with the chorizo, add the finely chopped onion. Sauté for about 3-4 minutes, or until the onion becomes translucent and soft. Add the minced garlic, smoked paprika, ground cumin, and cayenne pepper. Cook for an additional 1-2 minutes until the spices are fragrant and the garlic is lightly golden.
