2 medium zucchinis, diced into similar-sized pieces

1 red bell pepper, diced

1 teaspoon paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

2 tablespoons olive oil, divided

Fresh parsley, chopped (for garnish)

Prepare the Vegetables: Begin by preparing all your vegetables. Dice the sweet potatoes and zucchinis into even pieces for uniform cooking. Finely chop the red bell pepper and onion, and mince the garlic.

    Cook the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the diced sweet potatoes. Season them generously with salt and pepper. Sauté for about 10-12 minutes, stirring occasionally, until they start to soften and develop a golden-brown exterior.

      Add Aromatics: Introduce the chopped onion and minced garlic to the skillet with the sweet potatoes. Cook for an additional 3-4 minutes, stirring frequently, until the onion is translucent and exhibits a fragrant aroma.

        Incorporate Zucchini and Peppers: Add the diced zucchini and red bell pepper to the skillet. Sprinkle in the paprika and ground cumin, mixing everything together thoroughly. Cook for another 5-7 minutes, continuing to stir, until the zucchini is tender but still retains a slight crunch. Taste and adjust seasoning with additional salt and pepper if needed.

          Fry Eggs (Optional): If you wish to add eggs to your hash, heat a small pat of olive oil in another pan. Fry or poach the eggs to your desired doneness while the hash finishes cooking.
