Ingredients

2 cups cooked, shredded chicken (rotisserie chicken is an excellent choice for convenience)

1 cup black beans, rinsed and drained to remove excess sodium

1 cup corn kernels (can be frozen or fresh based on availability)

1 cup shredded sharp cheddar cheese for extra flavor

1 cup salsa (your favorite brand or homemade)

2 teaspoons ground cumin for warmth

1 teaspoon chili powder for a hint of spice

1 teaspoon garlic powder for depth

Salt and black pepper to taste

4 large flour tortillas (burrito-sized)

2 tablespoons olive oil (for brushing)

Cooking spray (to prevent sticking)

Fresh cilantro and avocado slices for garnish (optional but recommended to enhance presentation)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). While it heats, line a baking sheet with parchment paper, and give it a light spray with cooking spray to prevent the chimichangas from sticking.

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, black beans, corn, half of the shredded cheese, salsa, ground cumin, chili powder, garlic powder, salt, and pepper. Stir everything together until the mixture is well combined, ensuring each ingredient is evenly distributed.

Assemble the Chimichangas: Take one tortilla and lay it flat on a clean surface. Spoon approximately 1/2 cup of the filling mixture into the center of the tortilla. Fold the sides inward over the filling, then begin rolling from the bottom up to create a tight closure, resembling a burrito. Repeat this process for the remaining tortillas and filling.

Brush with Olive Oil: Place the rolled chimichangas seam-side down on the prepared baking sheet. Use a brush to lightly coat the tops and sides with olive oil, which will help them develop a beautifully crisp texture during baking.

Bake: Transfer the baking sheet to the preheated oven. Bake the chimichangas for about 25-30 minutes, or until they are golden brown and crispy to the touch.

Serve: Once baked, remove the chimichangas from the oven and allow them to cool for a few minutes. For an appealing presentation, garnish with fresh cilantro leaves and avocado slices as desired. Serve alongside additional salsa or a dollop of sour cream for dipping. Enjoy!
