Tofu Lettuce Wraps with Cherry Glaze

Ingredients
  

1 block of firm tofu (14 oz), pressed and drained

1 cup fresh cherries, pitted and chopped

2 tablespoons soy sauce

2 tablespoons maple syrup

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 small cucumber, finely diced

1 carrot, grated

1 red bell pepper, finely diced

1 tablespoon sesame seeds (for garnish)

1 head of butter lettuce or romaine, leaves separated

Fresh cilantro and green onions, for garnish

Salt and pepper to taste

Instructions
 

Prepare the Tofu:

    - Slice the pressed tofu into small, even cubes. Heat 1 tablespoon of sesame oil in a non-stick skillet over medium heat. Once the oil is hot, carefully add the tofu cubes, then season them with salt and pepper to enhance their flavor. Sauté the tofu for about 5-7 minutes, using a spatula to turn them occasionally, until they are golden brown and crispy on all sides. When done, remove the skillet from heat and set the tofu aside.

      Make the Cherry Glaze:

        - In a small saucepan, combine the chopped cherries, soy sauce, maple syrup, rice vinegar, minced garlic, and grated ginger. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Allow it to cook for 8-10 minutes, stirring occasionally, until the cherries soften and the sauce thickens slightly. Once the glaze has reached the desired consistency, remove it from the heat and let it cool for a few minutes.

          Combine the Ingredients:

            - In a large mixing bowl, combine the sautéed tofu with the diced cucumber, grated carrot, and finely diced red bell pepper.
