For the Tofu:

1 block (14 oz) extra-firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and black pepper to taste

For the Lemon Slaw:

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 large carrot, julienned or grated

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

Juice of 1 large lemon

1 tablespoon honey or agave syrup

Salt and black pepper to taste

For Assembling:

8 small corn or flour tortillas

Slices of avocado (optional)

Fresh lime wedges for serving

Instructions

Prepare the Tofu: Begin by cutting the pressed tofu into 1-inch cubes. In a medium-sized bowl, create a marinade by mixing the olive oil, soy sauce, lime juice, ground cumin, smoked paprika, garlic powder, and a sprinkle of salt and black pepper. Carefully add the tofu cubes to the marinade and gently toss until well coated. Allow the tofu to marinate for at least 15 minutes to absorb the flavors.

Cook the Tofu: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated tofu cubes in a single, even layer. Let them cook undisturbed for about 5-7 minutes on each side or until they turn a beautiful golden brown and have a slightly crispy exterior. When done, remove the tofu from the heat and set aside.

Make the Lemon Slaw: In a large mixing bowl, combine the finely shredded green cabbage, purple cabbage, julienned carrot, and chopped cilantro. In a separate small bowl, whisk together the olive oil, fresh lemon juice, honey (or agave syrup), and a pinch of salt and black pepper to create the dressing. Pour the dressing over the cabbage mixture and toss thoroughly to ensure everything is well combined. Taste the slaw and adjust the seasoning if needed.

Warm the Tortillas: To warm the tortillas, place them on a dry skillet over medium heat for about 30 seconds on each side, or until they become warm and pliable.

Assemble the Tacos: Take a warmed tortilla and layer it with a portion of the crispy tofu. Top each taco generously with the zesty lemon slaw. If desired, add slices of avocado for extra creaminess. Serve the tacos with fresh lime wedges on the side for a burst of added freshness when eating.

Serve and Enjoy: Dive into your delicious tofu tacos immediately, reveling in the vibrant flavors and textures while sharing the delightful experience with friends and family!
