Ingredients

1 pound ground turkey

1 cup uncooked brown rice

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

2 cups chicken broth

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup corn (fresh or frozen)

½ cup shredded cheese (cheddar or Monterey Jack)

Fresh cilantro or chopped green onions, for garnish (optional)

Lime wedges, for serving (optional)

Instructions

Sauté the Aromatics: In a large skillet, heat a tablespoon of olive oil over medium heat. Add the finely chopped onion and diced bell pepper. Sauté for about 3-4 minutes, or until they are softened and translucent. Stir in the minced garlic and sauté for another minute until fragrant and golden.

Brown the Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spatula, until the turkey is browned and no longer pink, approximately 5-7 minutes. Season the turkey with salt, pepper, chili powder, cumin, paprika, and oregano, ensuring the spices are evenly distributed.

Add the Rice: Once the turkey is cooked through, stir in the uncooked brown rice, allowing it to toast slightly in the skillet for about 1 minute. This step helps to enhance the rice's flavor profile.

Incorporate Liquids and Beans: Pour in the chicken broth along with the canned diced tomatoes (including their juices) and the rinsed black beans. Stir well to combine all the ingredients thoroughly.

Simmer: Bring the mixture to a gentle boil, then reduce the heat to low. Cover the skillet and let it simmer for approximately 30-35 minutes, or until the rice is fully cooked and has absorbed most of the liquid. Stir occasionally to prevent the rice from sticking to the bottom of the skillet.

Add Corn and Cheese: Once the rice is tender and fluffy, add the corn and carefully mix to combine. Sprinkle the shredded cheese on top, cover the skillet again, and cook for an additional 5 minutes until the cheese is melted and bubbly.

Serve: Remove the skillet from heat and garnish with freshly chopped cilantro or green onions, if desired. Serve the dish hot, accompanied by lime wedges for an extra zesty flavor boost.
