1 cup quinoa, rinsed

2 cups water or low-sodium chicken broth

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon chili powder

1 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1 cup canned black beans, rinsed and drained

1 cup cherry tomatoes, halved

1 cup corn (choose fresh, frozen, or canned)

1 avocado, diced

1/2 cup red onion, finely chopped

Fresh cilantro, chopped (for garnish)

Cook the Quinoa: In a medium saucepan, bring 2 cups of water or chicken broth to a rolling boil. Add the rinsed quinoa to the pot. Once added, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until all the liquid is absorbed. Once cooked, remove from heat and allow it to rest, covered, for an additional 5 minutes. Fluff the quinoa with a fork, then set aside.

    Prepare the Chicken: While the quinoa is cooking, take the chicken breasts and place them on a cutting board. In a small mixing bowl, combine the olive oil, lime juice, chili powder, ground cumin, salt, and pepper.
