Ingredients

2 medium zucchinis, grated

1 cup sweet corn kernels (fresh or frozen)

1/2 cup all-purpose flour

1/4 cup cornmeal

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika (optional for a smoky flavor)

1 large egg

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, chopped

3 tablespoons grated Parmesan cheese (optional)

Olive oil or vegetable oil for frying

Instructions

Prep the Zucchini: Use a box grater or a food processor to grate the zucchinis. Place the grated zucchini into a clean kitchen towel or a piece of cheesecloth. Twist the cloth to squeeze out as much moisture as possible. This step is crucial for achieving crispy fritters.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, black pepper, and smoked paprika. Ensure the ingredients are well-blended for an even flavor distribution.

Combine Wet Ingredients: In a separate bowl, crack the egg and beat it lightly. Add in the drained grated zucchini, sweet corn kernels, green onions, parsley, and Parmesan cheese if using. Stir the mixture until all the ingredients are combined.

Combine Everything: Carefully pour the wet mixture into the bowl of dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Take care not to overmix, as this can result in tough fritters.

Heat the Pan: In a large skillet, pour in 2-3 tablespoons of your chosen oil and heat over medium heat. The oil is ready when a small drop of the batter sizzles upon contact.

Form Fritters: Using a tablespoon, scoop the batter and drop it onto the heated skillet, gently flattening each mound to form fritters. Depending on your skillet size, cook 2-3 fritters at a time to avoid overcrowding.

Cook Until Golden: Fry the fritters for about 3-4 minutes on one side, or until they develop a beautiful golden-brown color. Carefully flip them over and continue to cook for an additional 2-3 minutes on the other side. Adjust the heat of the stove as needed to ensure they don’t burn.

Drain: Once golden and cooked through, transfer the fritters to a plate lined with paper towels to absorb any excess oil.

Serve: Serve the fritters warm, garnished with additional chopped parsley or green onions for an extra pop of color. These delicious fritters pair beautifully with a dollop of Greek yogurt or sour cream for added creaminess.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (approximately 12 fritters)

                      - Presentation Tips: Arrange the fritters on a colorful plate, drizzle with a bit of yogurt or sour cream, and scatter some extra herbs on top for an appealing presentation. Enjoy!
